Coconut Lemon Love Balls

This recipe is a variation of my original '2 Ingredients Probiotic Bliss Balls'. I decided to create a new flavour because I had heaps of fermented dates that needed using up. I love dates because they contain anti-inflammatory and anti-infective properties which make it an excellent food for those who suffer with chronic infections and auto-immune disorders. They're a good source of vitamin A & B-complex and they are rich in minerals such as iron, calcium, manganese, copper, and potassium + they help to remove toxins from the liver. The only problem is, they have a really high sugar content. So to solve that problem, I ferment them to remove the sugar. The fermented dates combine perfectly with the dried coconut to create a super simple bliss ball. But I LOVE flavour, so I really loved this recipe because the lemon provides a yummy, yet refreshingly tangy flavour and aroma. 


Makes 8 Bliss Balls

Ingredients

  • 1 cup fermented, dehydrated dates
  • 1.5-2 cups shredded coconut
  • Juice and zest of 1 organic lemon
  • A few drops of food grade lemon essential oil to taste
  • 2-3 Tbsp collagen powder
  • 1-1.5 Tbsp grated ginger (optional, but very yummy)
  • A few drops of liquid stevia to taste (optional) 

Roll in; shredded coconut, turmeric, beetroot or raspberry powder, spirulina, orange, lime or lemon zest, matcha, cacao nibs

Method

1. Blend all the ingredients (starting with 1.5 cups shredded coconut) and blend until evenly combined. 
2. Add in the extra coconut and re-blend. If it's still too wet (maybe the dates weren't dehydrated enough so they had too much moisture) add a touch more coconut and collagen and re-blend until you reach the right consistency. 
3. Use your hands to roll the mixture into balls. 
4. Leave plain or roll them in any of the above options. 
5. Store in an air-tight container. Eat within 1 week.
