Keto Choc Chip Ice-Cream Sandwich

- 'Chocolate Bulletproof Ice-Cream' or 'Bulletproof Vanilla Bean Ice-Cream'
1. Make the cookies.
Tip: if you make the cookies, bake them until they're only just golden brown (a tad under cooked) they will be easier to use/ eat the entire ice-cream sandwich because they'll be softer.
2. Place them onto a wire rack to cool down completely.
3. Now make the ice-cream, this will take 20-30 minutes.
4. When the cookies have cooled, spoon some of the ice-cream on top one of the cookies, then place another cookie on top so you have one cookie either side.
5. Repeat with the rest of the cookies and ice-cream.
6. Place them onto a plate and store them in the freezer, or have one straight away.
7. Savour every mouthful.
