Easy GF Corn Fritters
I’ve been getting a tonne of fresh corn cobs in my weekly veggie box lately. At one point I had eight corn cobs sitting in the fridge, so what better way to use them up than to make corn fritters! They’re incredibly easy to make and so versatile. You can customise the flavours with fresh herbs, your favourite spices, or add extra veggies like grated carrot or finely diced red onion. Simply add all the ingredients to a bowl, bind with eggs and flour, mix it all up then fry on each side until crispy, golden, and perfectly cooked through.
Here’s what you need to make these;
Makes 18-20 fritters
INGREDIENTS
5 cups corn (I used fresh corn)
10 eggs
¾ cup tapioca flour
½ cup coconut flour
2-3 spring onions, sliced
¾ tsp bicarb soda
1 Tbsp garlic powder
1 tsp turmeric powder
1 tsp paprika
Good pinch of salt
Ghee for frying
SERVE WITH

INSTRUCTIONS
If you’re using fresh corn, carefully slice the kernels off the cob and transfer them to a large bowl.
Add all the remaining fritter ingredients, and mix until well combined.
Heat two frying pans over medium heat and add a little ghee to each pan.
Spoon the batter into each pan in 3–4 portions, and cook on both sides until golden brown and cooked through. Repeat with the remaining batter until it’s all used up.
Serve warm with fresh rocket and avocado, and top with your favourite condiments, I love mayo with hot sauce or chilli oil.
These reheat beautifully in the oven for an easy breakfast or lunch. You can also add a fried egg on top or serve with smoked salmon.
