Everything-Free Wraps
I spent quite a bit of time last year testing wrap recipes, but had limited success. As you can imagine, perfecting a recipe that’s free from gluten, dairy, eggs, and nuts is no easy feat! After so many failed attempts, I eventually gave up… I do already have a 3-ingredient wrap recipe, but it uses cassava flour, which can be hard to find and often expensive. I wanted a more accessible, homemade option, so I decided to give recipe testing another go. Luckily, I nailed this recipe on my third attempt! So here it is: my ‘Everything-Free Wraps’ which are completely gluten, dairy, egg, and nut free 🎉
This recipe makes 4 medium wraps, or double it if you’d like 7-8 wraps.
Here’s how to make them;
INGREDIENTS
1/2 cup coconut flour*
3/4 cup tapioca flour*
1 cup warm water
2 Tbsp olive oil*
1.5 Tbsp psyllium husk*
Pinch of salt

INSTRUCTIONS
Add all ingredients to a food processor and blend until well combined and a soft dough forms. Let the mixture rest for 1–2 minutes so the coconut flour and psyllium can absorb the liquid.
2. Remove the dough from the processor, roll it into a ball, then cut the dough into four equal pieces.
3. Place one piece of dough between two sheets of baking paper and roll out evenly. If the edges become too thin as you roll, simply fold them back in and re-roll the dough between the baking paper until the wrap is more even. Don’t worry if it’s not perfectly round either.
4. I cook these on my Solidteknics pan over a low-medium heat so no oil is needed. Avoid cooking the wraps on high heat, as the wraps can stick and burn. Cook each wrap for a few minutes on each side, until lightly golden and cooked through.
5. Repeat with the remaining dough, rolling out and cooking each piece. I like to use two pans so I can cook two wraps at a time, it speeds things up considerably.
6.Fill with your favourite fillings and enjoy!
