GF Protein Sweet Potato Brownie
I’ve been working with Chief Nutrition to create a gluten-free protein brownie recipe, and I’ve been testing (and re-testing!) the recipe over the past month. My first few attempts ended up more like a rich, chocolatey sweet potato mud cake than a brownie, but honestly, it was so delicious. I shared it with friends and everyone loved it. I’ve finally shared it, and you can find the full recipe here.
I kept tweaking and testing, and I finally got the brownie recipe just right. These GF sweet potato brownies are such a delicious treat. They’re made with simple, whole food ingredients and I’ve added chocolate whey protein powder so each square has around 11g of quality protein. They’re gluten free, egg free, and come out perfectly fudgy every time. They make the best afternoon pick-me-up or dessert. Enjoy them on their own, or dress them up with fresh berries and a dollop of cream.
P.S. I haven’t tested this recipe with any other protein powders. I’m not 100% sure if collagen would be a straight swap for the whey, so if you do try it with collagen, you may need to bake it a little longer, but I haven’t tested it myself, so I can’t say for sure!
Gluten + Egg Free
Makes 8 large squares
INGREDIENTS
1 ¼ cups cooked sweet potato
½ cup melted coconut oil
½ cup peanut butter (smooth)
⅓ cup good quality cacao powder
¼ cup maple syrup
¼ cup coconut sugar
1 tsp vanilla extract
½ tsp baking soda
½ block dark chocolate, chopped
Optional: serve with whipped cream and fresh berries
INSTRUCTIONS
Line a tin with baking paper.
Cut the sweet potato in half lengthwise and place face down onto a lined baking sheet.
Place into the oven and bake for 45 mins or until soft.
Remove the sweet potato from the oven and allow to cool until you can easily peel the skin off them. Scoop the cooked sweet potato into a 1 cup + ¼ cup measuring cup.
Now add the sweet potato into a food processor with the other ingredients (except for the chopped chocolate). Blend to combine.
Pour into the pre-lined tin and sprinkle the chopped chocolate on top. Press the chocolate into the top of the brownie and spread it out evenly.
Place into the oven and bake for 30 minutes.
Remove from the oven and allow to cool.
Serve with berries and cream, or enjoy them on their own.
