Golden Coconut Lemon Logs
I've only recently just started experimenting with 'Golden Flax Meal', but I'm so happy about it! I've added Organic golden flax meal to these Coconut & Lemon Logs because they give them an incredible texture as well as some pretty amazing health benefits. Not only does flax improve digestion, it's also rich in Omega 3's, fibre, give you clear skin, reduce sugar cravings, balance hormones, fight cancer and promote weight loss. They're also rich in magnesium, protein, phosphorous, selenium and Vitamin B1.....and that’s just the beginning! I've also added lemon juice and zest which adds a beautiful zingy flavour and the fresh turmeric for that gorgeous golden colour.
If you're feeling lazy and couldn't be bothered rolling them into logs, simply press into a lined container and make it into a slice instead.
Makes roughly 14 logs
Ingredients
- 1/3 cup organic golden flax meal (I bought mine from IHerb)
- 1/2 cup collagen powder
- 4 cups shredded coconut + extra for rolling in
- Zest and juice of 3-4 lemon's
- 1-2 Tbsp fresh turmeric root
- 1-2 tsp powdered ginger (optional)
- Your choice of sweetener to taste (I used stevia)
Method
1. Add the flax meal, collagen and coconut into a food processor or thermomix and blend until an 'almost' butter forms.
2. Add the remaining ingredients (starting with juice and zest of 3 lemons) and re-blend.
3. Scrape down the sides and taste the mixture. Adjust any of the flavours and add more sweetener and lemon juice and/ or zest if desired.
4. The mixture should be quite sticky, if you added in the honey it will be EXTRA sticky, so you may need to mix through another 1/4- 1/2 cup of shredded coconut to get the right consistency.
5. Add some more shredded coconut to a shallow bowl.
6. Use your hands to break away some of the dough and roll them into logs. Place them onto the shredded coconut and roll them in it.
Tip: Add some coconut oil onto your hands to stop the mixture from sticking to your hands.
7. Continue rolling the logs in the coconut until all the mixture has been used up.
8. Place them in the fridge or freezer to set.
9. Store in an airtight container in the fridge or freezer.
10. Enjoy.
