GF Carrot Cake

INGREDIENTS

  • 2 cups grated carrots

  • 3 cups almond meal

  • 4 eggs

  • 1/2 cup coconut sugar

  • 1/2 cup melted coconut oil, butter or ghee

  • 3 Tbsp collagen

  • 1 tsp baking soda

  • 1 tsp apple cider vinegar

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • Zest of 1 orange (optional)

INSTRUCTIONS

  1. Preheat the oven to 180C. Line a cake tin with baking paper.

  2. Add all ingredients (except grated carrot) into a food processor. Quickly blend until all ingredients are combined (but don’t overblend).

  3. Add the grated carrot and mix through the cake batter (don’t blitz it, just mix it through).

  4. Pour the mix into the prepared cake tin.

  5. Cover with alfoil and place into the oven. Bake for 50 minutes.
