Easy GF Corn Fritters

Makes 18-20 fritters

INGREDIENTS

  • 5 cups corn (I used fresh corn)

  • 10 eggs

  • 3/4 cup tapioca flour

  • 1/2 cup coconut flour

  • 2-3 spring onions

  • 3/4 tsp baking soda

  • 1 Tbsp garlic powder

  • 1 tsp turmeric powder

  • 1 tsp paprika

  • Good pinch of salt

  • Ghee for frying

SERVE WITH

  • Avocado

  • Rocket

  • Mayo + hot sauce or chilli oil


INSTRUCTIONS

  1. If you’re using fresh corn, carefully slice the corn off the cob and transfer it to a large bowl.

  2. Slice the spring onions and add them to the corn along with the rest of the fritter ingredients. Mix until combined.

  3. Heat up two frying pans on a medium heat and add some ghee into each frying pan.

  4. Add some of the corn fritter batter into 3-4 blobs onto each pan. Fry on each side until golden brown and cooked through.

  5. Repeat until all of the remaining batter has been used up.

  6. Serve warm with fresh rocket, avocado and top with your favourite condiments. Mine are mayo + hot sauce or chilli oil.
