This recipe is my CHOCOLATE STUFFED GINGER COOKIES that I re-made into gingerbread men!

And as a bonus, they’re all the FREE’S (except for nuts)

Makes 14 gingerbread men

INGREDIENTS

Optional Icing
(for eyes and a smile)

INSTRUCTIONS

  1. Preheat oven to 170C and line 2x baking trays with baking paper.

  2. Add all of the ingredients (except chocolate) into a mixer or food processor and process until a dough forms.

  3. Roll the mixture out in between two pieces of baking paper (try not to roll it out too thin). Press a gingerbread man cookie cutter onto the rolled out cookie dough to cut out the gingerbread men shapes. Remove the excess dough from the ‘cut’ shapes and use a spatula to carefully transfer them onto the lined baking trays.

  4. Roll up the excess cookie dough and repeat until all of the cookie dough has been used up. Be gentle with them, if any cracks form, seal it back together gently using your finger tips.

  5. Slice enough Chocolate squares into 4 smaller squares. Press these onto the gingerbread men for the buttons.

  6. Place into the oven and bake for 13-15 minutes, or until golden brown.

  7. Meanwhile, if you want to add the eyes and mouth, add a small amount of coconut cream (roughly 2-3 Tbsp) + 2 rows of Chocolate to a small saucepan and melt together on a low heat. Pour it into a small ziplock bag and pop it into the fridge too harden.

  8. Remove the gingerbread men from oven and allow too cool before icing.

  9. When the icing has hardened a bit, snip a tiny corner off the ziplock back and carefully add eyes and a smile to each gingerbread man.
