Mango Vitamin C Gummies

I love making homemade gut-supportive gummies! Did you know that gelatin is known to be a healing food for an inflamed and damaged gut because of its ability to soothe and restore the gut lining?⁣ Gelatin helps to improve the gut integrity and our ability to digest food because it’s hydrophilic. This means that gelatin absorbs water and helps keep fluid in the digestive tract, promoting good intestinal tract and healthy bowel movements. Healthy intestinal cells prevent ‘leaky gut’ which is often at the root of many allergies, food intolerances, inflammatory conditions and autoimmune diseases.

However, before you buy any old Gelatin, it’s important to understand that not all brands of gelatin are the same. The chemically-treated packs of gelatin you find at the supermarket won’t provide you with the same health benefits that a quality grass-fed or organic gelatin powder does. Look for a product that is 100% pure gelatin made from pasture-raised, grass-fed or organic raised animals, and avoid gelatins that are mixed with additives, maltodextrin or other unnecessary ingredients.⁣⁣

Here’s what you need to make these easy, 4-ingredients gummies;

INGREDIENTS

  • 300g fresh or frozen mango (I use frozen organic mango as we don’t have access to fresh, affordable mangoes in NZ)

  • 1 cup filtered water + 3-4 Tbsp

  • 2.5 Tbsp Organic Gelatin (use “jordiepieface” for 10% off)

  • 1-2 Tbsp Cymbiotika Liposomal Vitamin C (use “jordiepieface” for 10% off)

INSTRUCTIONS

  1. Add the gelatin + 3-4 Tbsp water into a small bowl and mix to combine. Set aside for a minute or two and allow the gelatin to bloom (absorb the water and thicken).

  2. Add the mango + 1 cup of water into a blender and blitz until completely smooth.

  3. Pour the pureed mango into a saucepan with the bloomed gelatin.

  4. Melt on a low-medium heat until the gelatin is fully dissolved.

  5. Remove from the heat.

  6. Stir through 1-2 Tbsp of the Vitamin C liquid.

  7. Pour into a lined bread loaf tin or container and place into the fridge to set.

  8. Once set, slice into squares and enjoy.
